Sent where? To email? Saved somewhere?

Before the payment is triggered all the info from your form should be saved somewhere. So if you do save the form in database at the moment when the payment is triggered then you can simply add a hook that will send an email with the form details when payment status is "paid". Or just edit the emails sent from woo when the payment status is paid to include the form details.

I cannot recommend a best multistep form to be used but if you use a checkout editor then this could be handful for you:
