How do I add a UPI or any other Indian payment method to my WordPress site WITHOUT woocommerce ? any help will be highly appreciated

You can use QR Code image for UPI & payments links if the gateway you are using provides that option.
If you want to automate things then it will require custom coding.
Also checkout this plugin for UPI, I saw in quick search which works without woo.

plugin works only on PCs through QR code scan.

I have the impression Ill have to use woocommerce. Can you suggest same requirement plugin for woocommerce in which I can get payment successful notification?

Else go with RazorPay with woo they have an app where you will get notifications also.
